Grilled Halloumi Sticks with Honey & Chilli

Halloumi's high melting point means it chars without collapsing — which is exactly why it belongs on the grill. A honey-and-chilli glaze turns EcoBites halloumi sticks into a sweet, salty, smoky mezze that disappears in seconds. Works on a BBQ, a ridged griddle pan, or under the grill.

Method

    Heat a griddle pan or BBQ to medium-high and lightly brush with the olive oil.

    Grill the halloumi sticks for 2–3 minutes per side until deep grill marks appear.

    Meanwhile, warm the honey, chilli flakes and lemon juice in a small pan until loose.

    Transfer the charred halloumi to a plate and spoon over the warm honey-chilli glaze.

    Scatter with torn mint and serve straight away.

Tip · Oil the halloumi, not the pan, and don't move the sticks until they release cleanly — that's how you get clean char lines.
